In the cellar
Plenty of batches are fermented separately to ensure complexity in this wine with the whole clusters fraction per tank ranging from 30-100%. Both S/S and oak foudres are used for fermentation with pigeage 2-3 times per day. All fermentations were done spontaneously with natural yeast. The malolactic fermentation was also done spontaneously. Maturation took place in a combination of used French oak barrique and foudres for 11months.

In the vineyard
The first portion of the fruit is sourced to the Cederberg at 900m above sea-level. The soils are a combination of sandstone and ferricrete laterite. The rest of the vineyards sourced from the Polkadraai Hills, Devon Valley and Bottelary Hill wards in Stellenbosch dominated by decomposed granite.

Floral notes adds a gracious touch, dried lavender, hints of white pepper, olive, violet, dried fig, potpourri, ripe nectarine skin, cranberry, red currents, some dark fruit, young plums, some raspberry, red liquorice. Secondary: dusty, smoky, dark chocolate, vanilla, hints of clove, cedar, pastry, shortbread. The wine has good balance between fruit, the oak and the acidity. Well-made and will benefit with bottle age.
