Cavalli Estate has quickly become a recognized and respected South African 'lifestyle' experience with the estate's development being widely regarded as a significant event for Stellenbosch and the Cape Winelands. Cavalli's Wine & Vineyard philosophy is to produce world class wines with a very local character and a strong identity so to be clearly recognized as from the Helderberg region. The estate strives for the immediate environment to be represented in the characteristics of their wines while upholding sustainable farming practices to preserve the land which falls with-in the Cape Floral Kingdom, a Unesco World Heritage site.
The Helderberg region of Stellenbosch is nearest the ocean and lends the estate to the cooling influence of the Southerly winds. The soils contain large amounts of ''koffieklip'' with a higher percentage of clay in the subsoil, affording the wines an innate elegance and expressive fruit characteristic.
Craig Barnard has headed up the winemaking at Cavalli Estate since 2014, establishing the es-tate as one of the most dynamic young producers in the acclaimed ‘Golden Triangle’ of the Stel-lenbosch Winelands.
“You simply couldn’t ask for better terroir for producing premium wines,” says Barnard. “Our soils are superb, which really helps our root systems and our vines in producing exceptional quality fruit. And because we’re situated close to the ocean, we have a strong maritime influence from False Bay which ensures even ripening during the lead-up to harvest.”
With his fifth harvest safely in the cellar, Barnard’s focus is firmly on Chenin Blanc and Cabernet Sauvignon. “These are the two cultivars that truly excel on the estate,” says Barnard, who also oversees viticulture for Cavalli’s 27-hectares of vineyard.
“From concept through to consumption, a love of nature is the point of departure for everything we do. Every design consideration is with a mindfulness to upholding the site and environment, from the establishment of the indigenous gardens and habitat for wildlife, to the treatment of scarce water resources, to the sourcing of our produce, to the design and architecture that cele-brates the environment and site. The dream was to realize a project that is contextually driven and sustainable.”
